Garlic Scapes Cashew Dip

INGREDIENTS
VITAMIX OR FOOD PROCESSOR
FRESH GARLIC SCAPES (1-2)
3 CUPS OF CASHEWS
1/3 CUP OF OLIVE OIL OR AVOCADO OIL
3 TABLESPOONS OF LEMON JUICE (OR TO TASTE)
GROUND PEPPER AND SALT TO TASTE
GROUND GARLIC IF YOU WANT MORE
1/2 CUP OF CUCUMBER PEELED
1/2 CHIVES
METHOD
Soak cashews for 1-2 hours then rinse and discard water.
Cut garlic scapes at the bulbous white neck. Use the long garlic scapes under where you have cut.
Pour ingredients into blender and using tamper to combine. Stop to scrape down sides and remix to ensure complete smooth texture.
Put in fridge to get cold.
Serve with veggies, grain free crackers or use as part of a sauce.
